My Nana's Salmon Cakes

Since I am making this tonight for dinner, I decided to share the recipe. Very easy.

1 can salmon (I take out the big bones and take the skin off)
1/2 sleeve saltine crackers
1 egg
salt and pepper

Put salmon into bowl and mix in all other ingredients. Form into patties and cook (I put 1-2 tbsp butter in the pan) until crispy on the outside. My kids like to eat theirs with ketchup. I like mine plain.

  1. My mom always did this with oats instead of crackers(just enough that the patties were moist, but stay together)... otherwise the same.

    I always enjoyed them (with a little ketchup). Hubby's not so keen on them, so we don't have them often.

    Great with mashed potatoes and green beans :)
